Caribbean Black Beans


3 cups of Truitt Family Foods® Black Beans, drained
1 slice of Bacon, chopped
½ of an Onion, chopped
½ of a Green Bell Pepper, chopped
½ of a Jalapeno, finely diced
¼ cup of Brown Sugar
1 teaspoon of Salt
1 teaspoon of Ground Black Pepper
2 teaspoons of Granulated Garlic
1 teaspoon of Ground Cumin
1 teaspoon of Cayenne Pepper
2 tablespoons of Lime Juice
1 teaspoon of Liquid Smoke
2 tablespoons of Rice Wine Vinegar
1 tablespoon of Cilantro, chopped
1 cup of Chicken Stock


Place bacon in a large pot and lightly brown. Add the onions and bell pepper and sauté for 2 minutes.

Add the remaining ingredients, bring to a boil, reduce heat and simmer for 30 minutes.

MAKES, 1 quart
